Pea and Potato Curry



Tried this recipe tonight from BBC Good Food- Vegetarian Summer mag. Was pretty tasty, made a yummy dinner and a filling lunch for tomorrow. Will defo be adding this to the cooking inventory.

Ingredients:

  • 1 tbsp veg oil
  • 2 onions. sliced
  • 3 red chillies, de-seeded and thinly sliced
  • thumb sized piece of ginger, roughly chopped
  • 2 tsp cumin seeds
  • 1 tsp madras curry powder
  • 1/2 tsp turmeric
  • 750g new potatoes, halved
  • juice 1 lime
  • 500ml pot natural yoghurt
  • small bunch coriander, stalks and leaves finely chopped
  • 200-300ml veg stock
  • 300g peas
  • naan bread to serve
Method:

  • Heat the oil in a large, deep frying pan. Add the onions and cook slowly for 10-15 mins til soft. Add the ginger, chillies and spices for a min or two. Add the potatoes and lime juice and coat in the spice mixture. 
  • Add the yoghurt, stock, coriander stalks and the veg stock. Simmer for approx 45mins (until potatoes are soft) and the sauce has reduced.
  • Add the peas and cook for further five mins whilst heating up your naan breads.
  • Serve
