Tried this recipe tonight from BBC Good Food- Vegetarian Summer mag. Was pretty tasty, made a yummy dinner and a filling lunch for tomorrow. Will defo be adding this to the cooking inventory.
Ingredients:
- 1 tbsp veg oil
- 2 onions. sliced
- 3 red chillies, de-seeded and thinly sliced
- thumb sized piece of ginger, roughly chopped
- 2 tsp cumin seeds
- 1 tsp madras curry powder
- 1/2 tsp turmeric
- 750g new potatoes, halved
- juice 1 lime
- 500ml pot natural yoghurt
- small bunch coriander, stalks and leaves finely chopped
- 200-300ml veg stock
- 300g peas
- naan bread to serve
Method:
- Heat the oil in a large, deep frying pan. Add the onions and cook slowly for 10-15 mins til soft. Add the ginger, chillies and spices for a min or two. Add the potatoes and lime juice and coat in the spice mixture.
- Add the yoghurt, stock, coriander stalks and the veg stock. Simmer for approx 45mins (until potatoes are soft) and the sauce has reduced.
- Add the peas and cook for further five mins whilst heating up your naan breads.
- Serve
