Hairy Biker Style


Finally got my bursary so we did a food shop - yay! You know your getting old when the prospect of a food shop gets you all excited. Out with the little list and armed with a pound for your trolly. Decided to whip up a satisfying comfort concoction courtesy of the Hairy Bikers and BBC food: Great Sausage Casserole It serves 6, so plenty to store for another day.

Ingredients:

  • 1-2 tbsp sunflower oil
  • 12 pork sausages
  • 6 slices of streaky bacon cut into strips
  • 2 medium onions thinly sliced
  • 2 garlic cloves crushed
  • 1 tbsp of smoked paprika
  • can of chopped tomatoes
  • 300ml chicken stock
  • 2 tbsp tomato puree
  • 1 tbsp worchestershire sauce
  • 1 tbsp dark brown muscovado sugar
  • 1 tbsp dried mixed herbs
  • 2 bay leaves
  • 1/2 tbsp dried thyme (They actually call for fresh stuff but I didn't see any in the shop I was in so I used what I had)
  • 100ml wine (I used water because I forgot the wine)
  • 1 can butter beans


Heat your oil and fry your sausages until golden brown and then put the to the side in a large saucepan or casserole dish. 


Fry your bacon until slightly crispy then add to the sausages at the side. Then using the same frying pan gently heat your onions for five minutes. Add your garlic and heat for a further 2 minutes until it is nice a golden brown.


Then add your paprika and mix in for a few seconds, it turns the onions an awesome colour:


Add the rest of the ingredients (except from the butter beans and the sausages and bacon that you have at the side) to the frying pan and simmer for a few minutes. You then carefully pour this into the large saucepan that contains your sausages and bacon. This simmers for 20 minutes, stirring now and then. Whilst doing this I put potatoes on to boil to make mash.



The butter beans are now added for 10 mins and then served. Mmmmm yummy.




Not the most healthy of dinners with all that meat and frying but a very tasty one. Mind you most things that are bad for you generally is tasty. Tomorrow I'm trying my first powerhoop class - exercise with hula hoops. I'm very excited. In my head I will look like this:



But the reality will probably be me spending most of the class picking the thing up from the floor haha. Bring it on!
