Peanut Butter Fudge

I'm not a big fan of peanut butter but this stuff is pretty tasty - but so bad for you! Good job you can only eat a little at a time because it's so sweet. Just pop it in an air tight tub and keep it in the fridge and it will keep for a good while. It's a Sophie Dahl recipe.


Ingredients:
  • 125g butter
  • 500g dark brown sugar
  • 120ml milk
  • 250g crunchy peanut butter
  • 1 vanilla pod (seeds only)
  • 300g icing sugar
Takes about 40 minutes or so all together to make. The picture is only half of what I made (got bored cutting it after a while lol).
  1. Melt the butter in a saucepan over a medium heat.
  2. Stir in the brown sugar and milk, and bring to the boil for 2-3 minutes, without stirring.
  3. Remove from the heat, and stir in the peanut butter and vanilla seeds.
  4. Pace the icing sugar in a large bowl, and pour the hot butter and sugar mixture on top. Using a wooden spoon, beat the mixture until smooth.
  5. Pour into a 20cm deep square tin. Allow to cool slightly then pop in the fridge to set.
  6. I left it a night because I was busy and then cut it up into as neat squares as I could.
  7. Enjoy!
