I've been attempting to try out new recipes lately and expand my repertoire so I gave this one a go. This is a weight watchers one (that's right I am at weight watchers but I ain't gonna bore you and bang on about it). I must admit this one was drool-worthy! If Sirloin Steak wasn't so expensive I would make this at least weekly if not more. I made a bit of a boob though and didn't realise this recipe was for one person. Made it for James and I - more like a little starter. Was gagging for some more scrupulousness. At least I know this one is a keeper. Before this, the only stir-fry I made was chicken, a pre-pack of veg and soy sauce.
Serves 1 (Don't make the mistake I did!)
Ingredients
- calorie controlled cooking spray
- 2.5cm fresh root ginger, grated finely
- 100g lean fillet or sirloin steak, all fat removed, cut into thin strips
- 2 tablespoons soy sauce
- 1 tablespoon tomato puree mixed with 100ml water
- 4 spring onions
- 100g beansprouts
- half red pepper, de-seeded and sliced finely
- small bunch of coriander, chopped
Method
Heat a large non-stick frying pan or wok and spray the cooking spray. Stir-fry the ginger for 10 seconds and then add the steak and stir-fry for a further 2 mins, until it begins to brown.
Add all the other ingredients and stir-fry for 5 mins, then serve immediately.
